Educational class. Learn how to make ricotta from the CheeseMonger herself, Kerry. Taste many samples of homemade ricotta and then bring the knowledge home to try for yourself with many different recipes!
Limited to 20 spots!
Kerry will have demonstrations on Ricotta making: she’ll show mixing and heating. She’ll have a second batch heated and ready for it’s culture (folks can then see curd formation and experience spooning into the sieve and draining the whey). Kerry will be giving some more information on the process and what is Ricotta There will be batches from different recipes for everyone to sample and decide which method you like best. All recipes for those will go home with them. Then we can try some different ways to serve and use Ricotta.
